Use your ripe bananas and other pantry stables to make this moist and delicious healthy dairy-free banana bread recipe.
I don’t know about you but Banana Bread gives me a warm comforting feeling that I enjoy. The smell fills my kitchen with the sweet aroma of bananas and cinnamon that I crave. I have always loved baking banana bread and banana muffins and eating them for breakfast.
After having my daughter she seemed to gas when I would eat dairy so I modified my banana bread recipe to be dairy-free replacing butter with coconut oil.
You can also replace the sugar for 1/3 cup of honey or sweetener of your choice.
Dairy Free Banana Bread Recipe
Ingredients
- 4 RIPE BANANAS
- 1/3 CUP COCONUT OIL
- 2 LARGE EGGS
- 1 3/4 CUPS ALL-PURPOSE FLOUR
- 3/4 CUP SUGAR
- 1 TEASPOON BAKING SODA
- 1 TEASPOON CINNAMON
- 1 TEASPOON VANILLA EXTRACT
- 1/4 TEASPOON SALT
OPTIONAL:
- 1/2 CUP DARK CHOCOLATE CHIPS
- 1/3 CUP CHOPPED WALNUTS
Instructions
- Preheat the oven to 350 F and grease or spray a 9 x 5-inch loaf pan with coconut oil.
- Place the bananas in a large mixing bowl and mash them with a fork or electric mixer.
- Slowly add in coconut oil, sugar, vanilla, and eggs (one at a time).
- In a separate bowl whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the flour mixture to the banana mixture, on low speed with the mixer, rubber spatula, or fork. Just until well-incorporated, but do not over-mix.
- At this point you can fold in the optional ingredients if you would like, then, add the whole mixture to the greased loaf pan.
- Bake for about 55 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then remove it from the pan and finish cooling on a wire rack.
- Slice and enjoy.
